Who does not like chocolate? These are some of the easiest truffles to make. It is very handy to have a few made up in advance and kept in the freezer for guests. Truffle flavorings are endless. Some of the more exotic truffles use single origin, organic chocolate and flavor additions such as designer salts. I am a great fan of lavender and it is abundant at our local Farmers Market. If fresh lavender is not available, use the vanilla bean in its place.
