Mini Tart Tatin
This is my all time favorite dessert, caramelized apple tart. Serve it with a little creme fraiche and it is perfection on a plate. For this presentation, I caramelize apples in sugar and butter until they are lightly golden and translucent. I then place them in muffin tins, spoon over some of the caramel, top with a puff pastry lid and then bake until the pastry is light and golden. This method works well for plated desserts in banquet situations.
