Sly's Restaurant Cooks Up Michael's Waterside Menu

My dear friend Chef James Sly offers a regional French inspired menu each month. This month features some of the menu classics from my restaurant days at Michael's Waterside. The souffle was a particular favorite and it hailed from the famed Le Gavroche in London, England. Chef Albert Roux once commented that that dish "paid the rent."
