Allen Sides is not only the owner of Ocean Way Recording, he is also one of the most respected engineer/producers in the music industry. Sides began his distinguished recording career in 1968 and opened his first studio, Ocean Way, in Santa Monica, 1973. In 1977, he purchased the renowned United Recording and relocated to Hollywood. In 1979, he acquired Western Recording and consolidated both venerable operations into Ocean Way. Record One became part of the Ocean Way family in 1988. In 1997, Ocean Way Nashville opened on famed Music Row.
As an engineer/producer, Sides' has recorded over 500 albums and won 5 Grammy's. We filmed the episode at the renovated estate built by the heirs of John S. Gray. Mr. Gray is known as the man who financed Henry Ford's automobile business. Gray's $10,500 investment in 1903 provided a profit of $36,605,075 (today's dollars$524,728,203.90) when the heirs, David and Martha Gray, resold the shares to Henry Ford in 1919. Those profits helped build the magnificent estate renovated by Anne and Alain Sides in Santa Barbara. Their fantastic kitchen was the perfect venue for cooking a savory dinner.
Considering that Alain has garnered five Grammy Awards, I decided to prepare a menu based on my interpretation of some of the dishes served at the grammy Awards dinner. The first course is a Panna Cotta of Leeks with Caviar. This is a riff on the sweet Italian dessert and is a sort of savory jello. The main dish features a NY steak sauced with green peppercorn demi glace and flanked by potatoes Gratin Dauphinoise. Dessert is a rich homemade chocolate ice cream with cherries.
