Back in 1981, I was fortunate to have spent a month sabbatical at Restaurant Troisgros in France. At the time, the two brothers Jean and Pierre Troisgros were at the stove. Their three-starred Michelin restaurant was at the forefront of a style of cooking called Nouvell Cuisine.
The kitchen itself was a wonder. The ceiling was lined with automobile type glass. All work surfaced could be cleaned with a bucket of water and a squeegee. It is a very open design and overlooks the garden of the B&B they operate next door.
In their cookbook, Cuisiniers a Roanne, they have a recipe for Poulet au Vinaigre de Vin. I have personalized my version of the recipe with the addition of mushrooms and the use of canned cherry tomatoes.
I prepared this dish to celebrate my wife Christine's and my twelfth wedding anniversary. We would have preferred to dine out in our new hometown, Charleston, SC, but the current Corona pandemic has muted all restaurants. It was delicious and the wine pairing of Don Thomas Vineyard 2014 Cabernet Sauvignon was a perfect foil for the dish.
It's October. Time for Octoberfest. Skip the beer and go to the dessert station. Pastry chef Christine Dahl (A.K.A. my wife) bakes pastries for a local country club every year for their Octoberfest. I say, why wait for Octoberfest. These are great desserts anytime. The Linzer torte is my favorite, especially when made with homemade jam. The Linzer Torte History from Wikipedia
The Linzer Torte is a traditional Austrian pastry, a form of shortcake topped with fruit preserves and sliced nuts with a lattice design on top. It is named after the city of Linz, Austria.
Linzer torte is a very short, crumbly pastry made of flour, unsalted butter, egg yolks, lemon zest, cinnamon and lemon juice, and ground nuts, usually hazelnuts, but even walnuts or almonds are used, covered with a filling of redcurrantpreserves or, alternatively, thick raspberry jam or plum butter.[2] or apricot jam. Unlike most tortes, it is typically single-layered like a pie or tart. It is covered by a lattice of then dough strips placed atop the fruit. The pastry is brushed with lightly beaten egg whites, baked, and garnished with nuts.
Linzer Torte is a holiday treat in the Austrian, Hungarian, Swiss, German, and Tirolean traditions, often eaten at Christmas. Some North American bakeries offer Linzer torte as small tarts or as cookies
Linzer cookies (German: Linzer Augen, "Linzer eyes") or Linzer tarts are a sandwich cookie version, topped with a layer of dough with a characteristic circle shaped cut-out exposing the fruit preserves, and dusted with confectioner's sugar. The Linzer torte is said to be the oldest cake in the world. For a long time, a recipe from 1696 in the Vienna Stadt- und Landesbibliothek was the oldest one known. In 2005, however, Waltraud Faißner, the library director of the Upper Austrian Landesmuseum and author of the book Wie mann die Linzer Dortten macht ("How to make the Linzer Torte"), found an even older Veronese recipe from 1653 in Codex 35/31 in the archive of Admont Abbey.
The invention of the Linzer torte is subject of numerous legends, claiming either a Viennese confectioner named Linzer (as given by Alfred Polgar) or the Franconianpastry chef Johann Konrad Vogel (1796–1883), started mass production of the cake in Linz around 1823.
The Austrian traveler Franz Hölzlhuber claims to have introduced the Linzer torte to Milwaukee in the 1850s.

Am I Blue and Crabby? No, not me. However, this blue crab is. My granddaughter Tory, in Charleston, SC, catches them in the estuary by her back yard. How convenient is that! When I worked in Charlotte, NC, we used the jumbo lump morsels from the blue crab to prepare crab cakes. The jumbo lump is like the filet mignon of crab. We used some 50 pounds a week!
Tory's mom, Emily, my daughter one, advises me that they are simply cooked in boiling water seasoned with salt and Old Bay. From the photo it looks like a little mayonnaise was added to the plucked crab meat.
I am inspired to go out and get some of our local crab and cook it the same way. I am off to buy a crab trap and will be fishing tomorrow morning. I think I will make some aioli and serve the crab with crusty French bread.

The Inn Crowd, hosted by producer Craig Case and Chef Michael Hutchings brings The Inn Crowd cooking show to the Santa Barbara City College. Our special guest is Earl Armstrong. A native Santa Barbarian, Earl Armstrong is the founder and current president and board chair of Armstrong Associates, Inc., a general contracting company specializing in commercial, health care, and custom residential construction. Earl is very engaged in the Santa Barbara community, and currently serves as the board president of the SBCC Foundation. He is also on the board of Goleta Valley Cottage Hospital Foundation, serving as chairman of the board from 2002-2005, in addition to returning as chair in 2015 for the grand opening of the new Goleta Valley Cottage Hospital. He is a past board member and chair of the Santa Barbara Chamber of Commerce; a past board chair of Hillside House; a past board member and vice chair of Santa Barbara Unity Shoppe; and a past board member of the Montecito Retirement Association.
Chef/Director of the School of Culinary Arts and Hotel Management, Randy Bublitz, selected three students to be part of a master class. Marisol Aguirre, Marcelo Chacon, Ralph Lowi, aspiring chefs, assisted myself in preparing a very classic French style menu. I might add that I am delighted to be an adjunct professor and teach advanced pastry at the college.
The first course was a riff on the dessert called Pithivier. In this case, the filling was a savory pate of duckling served with a duck demi glace spiked with mustard and French pickles.
The main course harkened back to a restaurant near Condrieu, France, called the Beau Rivage. In 1978, I did a week-long stint in the kitchen. The family meal one day was a whole stuffed turbot with crayfish. I have replicated this dish using local halibut.
The finale was created by chef Christine Dahl (my wife and source for many of my dessert dishes). Chef Dahl prepared her fabulous Sea Shell Cake, very popular in this seaside town of Santa Barbara.

The Inn Crowd, hosted by Craig Case and Chef Michael Hutchings, is delighted to share an episode at the Taste of the Town fundraiser. 2016 is the thirty-fifth year that the event has been held at the Riviera Park in Santa Barbara, CA. Some 40 restaurants, caterers and wine makers offer "tastes" to some 1000 participants. Chef Michael has participated in the event since the inception in 1981. Tina Takaya, owner of Opal restaurant and Honorary chairperson, and Michael Weisbrock, Arthritis Foundation director, presented chef Michael with a award for the long tenure of supporting the Taste of the Town.
Over the years, chef michael has offered many different tastes and in this episode we showcase a corn vichyssoise with a seared sea scallop as well as a ragout of chickpeas topped with a goat cheese mousse. For good measure, one of the most popular tastes, Potato Crepe with Golden Caviar and Creme Fraiche, is also demonstrated.

Viva la Fiesta! The Inn Crowd cooks for the Fiesta Primavera prelude. Craig Case, host of The Inn Crowd, and Chef Michael Hutchings welcomes David Bolton and JC Gordon to the historic Dos Pueblos Ranch in Goleta, California. David is the chair for the Fiesta Primavera. He also served on the board of the California Missions Foundation.

The Fiesta Primavera is the launch party for the week-long celebration of the Spanish heritage of Santa Barbara and also the unveiling of the Old Spanish Days poster. The Old Spanish Days - Fiesta has its roots in 1924.

JC Gordon is "El Presidente" of this years fiesta celebration. He plays a key ceremonial and organizational roll for the events of Old Spanish Days - Fiesta. This years theme is Santa Barbara: Costal Frontier. The location of the Dos Peublos Ranch was appropriate due to all the historical events that have taken place in the area. Click here for that history. That history has four broad stages, the Chumash, Spanish, Mexican and American eras. With that in mind, my menu for the show reflects some of that history.
The first dish features the local cultured abalone from The Cultured Abalone farm that is located on the Dos Pueblos Ranch. Abalone is a historically important food of the local band of Chumash Indians. The shells were also used for decorative and utilitarian purposes like fish hooks and bowls. I used a garnish of sea beans native to the area. The next course was a riff on chile rellenos with shrimp. Pork, introduced to the area by the Spanish, was the featured main course with a pomegranate sauce. The finale is a lemon roulade cake that pays homage to the citrus industry in the Santa Barbara costal area.

That chicken as it came to be know, was a somewhat feral bird that scurried around the barn where we filmed this episode. While the chicken was dreaming of table scraps I was dreaming of Poulet Morengo, that famous chicken dish improvised by Napoleon's chef.

Chicken Marengo is a French dish consisting of a chickensautéed in oil with garlic and tomato, garnished with fried eggs and crayfish. The dish is similar to chicken à la Provençale, but with the addition of egg and crayfish, which are traditional to Chicken Marengo but are now often omitted.The original dish was named to celebrate theBattle of Marengo, a Napoleonic victory of June 1800. According to a popular myth, the dish was first made after Napoleon defeated the Austrian army at the Battle of Marengo at Marengo south of Turin, Italy, when his chefDunand foraged in the town for ingredients (because the supply wagons were too distant) and created the dish from what he could gather. According to this legend, Napoleon enjoyed the dish so much he had it served to him after every battle, and when Durand was later better-supplied and substituted mushrooms for crayfish and added wine to the recipe, Napoleon refused to accept it, believing that a change would bring him bad luck.'

In my youth, just learning the cooking trade, I met chef Mike Roy at a food convention. Chef Roy was an icon in the food world and was a popular TV and radio host. His shows predated the food revolution that transpired in the late 70s and early 80s. The Food News Hour, his show, made its debut in 1965. It would run for 11 successful years, ending with chef Roy's death in 1976.
A stint on early TV predated the KNX radio show. In 1950, Chef Roy was asked by KTLA to try his hand at "Daytime television.' "Mike Roy's Kitchen" was born on a hastily thrown-together set. After taking calls from listeners, the show took off and evolved into a full blown cooking show.
His memory was legendary and he would often field questions off the top of his head. Entering the KNX studio, he always had a battered briefcase, his beloved "file of falderal." Amongst other tombs were copies of The Joy of Cooking and a pair of burgundy-colored Gourmetcookbooks. Chef Roy also penned 12 cookbooks during his career.
At a recent dinner party, the host showed me a treasured copy of Chef Roy's Book 2. It is well worn, dog eared and soiled. The page with the cioppino recipe seemed to be the most favored. I have found a copy on the internet and look forward to seeing a slice of cooking history.
Often when we cater, we are preparing canapés to preceded a dinner or are in fact the main event at a reception or cocktail party. There are hundred of different selections in our repertoire.
The selection above was for a small dinner party that had prime tenderloin and a tart tatin to follow. Canapés included (from upper left) smoked salmon mousse on brioche, melon with imported prosciutto, fondant potatoes with goat cheese, deviled quail's eggs. Hungry? Give us a call.

Chef Michael is delighted to announce a new series of cooking classes in his professional kitchen. Michael Hutchings is the host of the popular video cooking show The Inn Crowd, owner of Michael's Catering, and Adjunct Professor of Advanced Pastries at Santa Barbara City College.
Classes are held in the chef's kitchen and will feature a range of dishes designed for entertaining at home. Food styles encompass classic Europeans foods as well as the chef favorite American dishes and more.
Chef Michael's will show all the details in preparing the recipes. Students will assist in some of the preparation.You will see professional methods for you to use in your own cooking. Learn the fundamental skills for a lifetime of enjoyable cooking. Work side-by-side with other students to prepare each dish. Interact with classmates and the chef Michael for a rich learning experience. You will have recipes for all dishes prepared, special equipment needs.

Should I register for a class with a waitlist?
If a class is in waitlist status, you can add your name to the waiting list. You do not need to submit any payment information until a spot becomes available. If an opening becomes available, you will be contacted by phone or email. Please provide both day and evening phone numbers. Your credit card information will be required at the time you accept a spot in the class. Depending on kitchen availability and interest, we may add additional classes to satisfy demand.

What is your cancellation policy for classes?
You may cancel your registration for a class up to 48 hours in advance of the class starting time and receive a full refund or transfer to another class of equal value. To cancel a registration, contact the kitchen at 805 568-1896. No refund or exchanges will be given on classes that are cancelled less than 48 hours prior to the class. SB Cooking School reserves the right to cancel any class that fails to attract sufficient enrollment, chef illness or inclement weather. We will contact you by email or telephone and issue a full refund or you may request to be transferred to another class of your choice (depending on availability). If you miss a class due to weather-related concerns, our standard cancellation policy applies.
What should I wear?
We ask that you wear comfortable, casual clothing and flat comfortable shoes with closed toes. Please do not wear open toed shoes or sandals. We will have aprons for you to wear. The aprons are also available for purchase. We are not responsible for damage that might occur with preparing food.
Details
Class participants must be 18 years old or more. You must be 21 years old to consume alcohol and able to provide proper identification when asked by our staff. Use of equipment is at the risk of the participants.
Location and parking: Handicap parking is available, please call ahead as stalls are limited. Due to limited space, all other please use street parking. Location is 22 W. Mission Street, Suite G in the back of the old Flying “A” studios between State Street and Chapala.
